so Sunday night I had to leave the house due to a lack of Huck-chow. I also had to drop a prescription off at Target. So on the way home, I decided to see what the hub-bub and traffic was about at Sonic. So I stopped in. I decided to go for car-hop service, and pulled in when a space cleared. I browsed over the menu, and tried to pick something I would like. I opted for two of their value chicken strip sandwiches, a small order of "tots", and a Strawberry Shake.

So onto the food. The chicken strip sandwiches were darn tasty. Nice and crispy chicken, with some lettuce on the bottom, and some mayo. Tasted good and went down easy. The "tots" where almost all tots, but I also had some popcorn chicken pieces and regular fries mixed in as well. Now I personally got a kick out of this, as when I get a stray food mixed in with others, it's a treat. Like when you open a bag of Doritos and get a Cheet-o inside the bag as well. Now about the shake. It was EXCELLENT. And thick. Like so thick trying to drink it actually loosened my partial. I really enjoyed it.

Of course, now I have a copy of the menu in my car, and I have already picked out somethings I need to try next, like the lime-aides and also the smoothies.

I came home, and I was/am still nursing a pulled pectoral muscle. It's really painful, and hurt enough to keep me in the house Saturday night, meaning I missed the chance at a movie w/Kristen. I stupidly popped some pain killers when I came home, and felt better enough and installed the attic fan I bought. I started around 7-8pm, and planned to be done by 11pm, at the latest. Between cutting a hole in my attic door, and cutting the wood for the fan to mount to, I didn't start installing UNTIL 11pm. I also ran some conduit to encase the wire for the fan, and by the time I cut power and finished wiring, it was 12:30. I also found out later that I almost lost my one external hard drive when I cut the power to the attic, which apparently is hooked into an outlet I plug my computer into. So I got the fan powered and started fixing the problems I was coming across, like the air leak out of the top. By 2am, I had the fan running and the attic COOLING nicely, and went downstairs to bed.

Of course, when I woke up this morning, my muscle reminded me of all the work I did. So I was in a lot of pain today, which is of course a day they send me around to random locations to do things I have no clue how to do b/c it's systems I have never dealt with before. I think I figured out what I was doing, which is good. So here I am, sitting on the couch, not really minding my hurt shoulder. Why? Because I walked into a fallen branch and it jammed into the top of my foot. So it hit near a vein, and the swelling and pain has started. I forecast a nice bruise to compliment the others I am sporting tomorrow morning.

OK, that's it for tonight, as I am tired, and need to sleep. BADLY. So on that note, I will bid you all Nighters.

before you know it, another years worth of holidays will be here and gone. It's amazing, isn't it? So this weekend was the startup for me.

Saturday, I woke up earlier than I have been, drank a few cups o' ambition, and ventured towards Toms River. On the agenda were shopping, missions, and chores. We needed diesel for the big truck, so I got to ride it around, which is always fun :). First stop was Harbor Frieght for some tools for the farm such as dead blow hammers for the water tubs, and tape to repair the hoses. After that, I shot over and had my hair cut, which was such a relief. I was beginning to feel like Huck. I went next to Foodtown to pick up some bakery boxes for my cheesecakes. I then went to pick something up at my Mothers that I had left there the previous week. Then it was shopping time! I went over to ShopRite which was packed and gathered my necessary ingredients for my cheesecakes. This year I am trying out two recipes, one of which will be the winner. I of course made at least one mistake and underestimated how many graham crackers I had at home, which affected my recipe, but not that bad. After Shoprite, I made a quick pit stop at Stop and Shop for water, then Acme for cake rounds for the boxes. It was straight home then to unload the truck, clean a little, then start baking. In the end, I didn't get finished till about 2am, and didn't goto bed until about 4 b/c I was talking with Molly and watching movies.

Sunday I woke up extra late, which wasn't good and came w/drama, which I will not go into here. I worked around the farm and got rid of more crap near the rive, which is good. I also got my arm sore from machete hacking, which I'm paying for now. I also made my Amaretto cheesecake and added the topping to my Chocolate peanut butter one. I think they came out good, but they do have their problems:




All in all, they are pretty good. The chocolate peanut butter one is too chocolaty, and the Amaretto one has some crust problems. I am currently polling to see what people think.

OK, I just got tired all of a sudden, so I am off to sleep. Nighters all.

Accept Christ
Below are the Easter desserts for this year.


This is a chocolate strawberry cheesecake. It has a chocolate crust with a layer of sliced strawberries on top of that. The filling is a standard cheesecake filling. My problems with it so far are that I forgot to parchment paper the bottom of the pan, and the crust went wonky and crumbled too much, and I'm not sure if I cooked it long enough. Since I modified my oven last week, I've been on a learning curve when it comes to baking.

This is a Splenda apple pie I baked for Kari's family for their Easter if Kari ever shows up here today to pick up her stuff. I promised her Dad I would make him another one, and I never did. My problem with this pie is that I screwed up on the lattice top crust. Again, problems only I seem to care about and people tell me I shouldn't. Oh well.

OK, so below is this years test cheesecake. I am awaiting feedback from a panel of testers. Who comprises that panel, I have no clue.
